St. Patrick's Day Corn Beef and Cabbage

Tomorrow, March 17, 2014 is St. Patrick's Day and most people just love corned beef and cabbage.

For those who have never made it, it is simple. Just purchase a packaged chunk of corned beef and your local grocery store.  It will have a package of seasonings included.

Boil the meat on low for about 3 hours, then add potatoes and carrots. Continue cooking on low heat for another hour, until vegetables are tender.

Then add a head of cabbage, cut up in chunks.  It will seem like a lot, but it quickly cooks down. When cabbage is soft, your Corned Beef and Cabbage is ready to eat.

If you don't like cabbage, simply leave it out. The leftover corned beef makes wonderful sandwiches.  And it tastes even better the second day Enjoy!!
